Our Coconut Pineapple Scone is one of my personal favorites, borne out of my love of both coconut and pineapple. While not a traditional English scone, it is simply delicious with pieces of grated coconut and both fresh and dried pineapple. Lightly sweetened, they are moist, made with pure butter and cream, and can be enjoyed either as a breakfast item with jam or butter and hot tea, or put a dollop of whip cream, sweet fresh or canned pineapple chunks and a sprinkling of coconut for a delightful dessert.
