Caribbean Citrus Rum Summer will soon be upon us and what better time of year to enjoy the bounty of fruits than now so we've chosen this cake as as our Cake of the Month.  A delightful blend of rum and fresh orange juice is baked into the cake, along with orange and lemon zest, then a citrus rum glaze made with Barbados Rum is poured over the entire cake.  Decorated with our white chocolate ganache, lemon color drizzle and lemon/orange zest on top.  Just slice and serve with a lemon or orange wedge and whipped cream.
